Chef Ivo Marchionni
Chef Particular A RomaBorn in Avezzano (Abruzzo) and raised in Rome, Italy, Chef Ivo draws on the wealth of culinary tradition that only growing up in Italy is able to offer. His penchant for the culinary arts was cultivated early in his childhood, and his passion for meticulously curated produce blossomed in his years spent nurturing an array of fruits, herbs and vegetables with his Nonna in his family garden.
Educated in Switzerland, Chef Ivo obtained his Bachelor’s Degree in Hospitality Management from Les Roches Global Hospitality Education, graduating in 2017. Throughout his time spent in Switzerland, Chef Ivo seized every opportunity to take part in culinary events, initiatives and competitions both in school and abroad. He first fell in love with life in the kitchen when he began his kitchen apprenticeships, first at the world-renowned Chedi Andermatt (Switzerland), before diversifying his understanding of local Catalan and Spanish Cuisine at the W Barcelona (Spain).
Upon graduation, Chef Ivo embarked on a fast track career, starting in the fabled kitchen of 2-Michelin starred Dinner by Heston Blumenthal at the Mandarin Oriental Hyde Park. In his time as a Commis and Demi Chef de Partie there, he greatly broadened his repertoire and expanded his understanding of flavours and precision, while constantly solidifying his foundation of being technique-driven. He subsequently joined 1-Michelin starred Alyn Williams at the Westbury as Senior Chef de Partie, where he was promoted to Sous Chef within six months.
Prior to his move to Bangkok, Chef Ivo had returned to his roots to be appointed Group Executive Chef for Pacifico Restaurant Group, where he managed the kitchen operations of three trendy and critically acclaimed Peruvian-Nikkei restaurants in Rome, Milan and Sardinia; a time that he remembers fondly as one that allowed him to break down the walls between cultures, and one that truly allowed his creativity to thrive.
Chef Ivo joined Le Cordon Bleu Dusit as Chef Instructor in 2023. His culinary style is rooted in his Italian heritage, influenced by his international experiences, and inspired by a focus on sustainability that originated from his deep understanding and respect for quality produce.
