After completing my cooking, pastry and butchery training at the École Hôtelière de la Capitale, I worked in several restaurants in the National Capital. The taste for travel made me want to open my doors to the culinary world, namely Asia, Australia and Western Canada. Traveling is for me the best cooking school to feed your baggage. Sometimes I feel like I'm done with my learning. Looking back, I realize today that in reality I have always learned. For me, the life of a self-respecting cook is just one long apprenticeship that starts all over again.
One day, we think we know enough, the next day we realize that we are ignorant of so much good knowledge.
