The cuisine that captivates me most is Italian, and the language I hold dearest is Spanish, my native tongue. I do not believe in blending distinct cuisines, but rather in refining cooking methods. To me, fusion lacks authenticity; true culinary art arises from the purity of tradition. Every ingredient should maintain its inherent flavor, and it is through the thoughtful combination of ingredients that genuine creativity shines. Whether preparing a humble tortilla pateada or a refined beef bourguignon, everything can be crafted with patience and respect for the ingredients, using only the finest selections.
I strive to stay deeply aware of my surroundings, adapting to the realities of my budget while always prioritizing quality. My kitchen is always filled with aromatic herbs and an abundance of tomatoes. Italian cuisine first enchanted me many years ago, and it remains where my expertise truly shines. From a simple pizza to a complex risotto, we must always pursue excellence while never losing sight of our Latin American roots.
