I am a professional chef with more than 8 years of experience in kitchens, of which I dedicated 3 to the training and education of young apprentices of different culinary disciplines, among which pastry and bakery stand out.
After 2 years in medical school, I decided that cooking was a better way, graduated from Gato Dumas, 2014; I have not stopped learning and understanding cooking from an intermediate point between medicine and gastronomy, biochemistry and nutrition.
Anthropology, culture and art also meet with cuisine, and these are the points of contact that I like to exploit in the creative process of a dish or a menu.
