Professional chef since 2004 after completing a 3 year diploma in cookery.
I have only ever worked at 5 star establishments as excellence has always been my goal. I started out in game lodges, then went off to work at the Soho Hotel in London for 4 years. Spent 2 years in Franschhoek at a restaurant that was in the world's top 50 at the time, after that I went on to become the head chef at the Queen Victoria Hotel for about 5 years. I left the restaurant side of things and went on to be a personal chef for a family for 7 years. In 2022 I decided to take my career elsewhere and got into the yachting industry and when in Cape Town I do private chef gigs in between.
I can do modern contemporary / fine dining, but also really enjoy fresh and healthy, ie Asian and Mediterranean, Ottelengi style. I am always open as to what the client is wanting.
