I am a purpose driven individual, who loves serving good quality food and seeing the satisfaction that my team and food has given a guest.
I am familiar with the indevidual needs of clients and how to answer them, and i am experienced in both buffet and a la carte preparation.
In these disciplines i have done from “six star” fine dining to beach bar/pub food.
My responsibilities have included:
Opening of venues. Like the Best Western, Uganda. The proudest in my career has been Arabella Grand, Cape Town.
Designing and implementation of menus
Hands on food preparation
Cost control
Maintenance of hygiene standards,”HACCP” guidelines.
Maintenance of chemicals and equipment
Ensuring adherence to safety and security policies in the kitchen
Overseeing, assisting and training lower level staff
Administration
Assisting and creation of food styling/ photoshoots for magazines and such.
Creating menus and food concepts to fit into owner/managers desired focus.
Cost control.
