Before entering college, I spent a year working in professional kitchens, most notably as Executive Sous Chef at The Nicolett and as a stagier at the three-Michelin-starred Benu. These roles immersed me in the intensity and artistry of fine dining, teaching me how to thrive under pressure, lead with precision, and never stop refining my craft. Whether managing a line, prepping intricate mise en place, or adapting to last-minute changes during service, I came to love the rhythm and rigor of the kitchen. That year shaped not only my work ethic but also how I think about systems, creativity, and resilience—lessons I’ve carried with me ever since.
