With over forty years experience in restaurant and hotel industry, I endeavor to maintain high standards of excellence while providing a creative culinary perspective. My Colorado history includes stints at acclaimed restaurants Papillon, Sushi Den, Tante Louise, Q’s and Chives. This background will provide a diverse foundation to further any establishment’s continued success.
My career in the kitchen began in 1978, working for venerable Swiss chef Beat Zuttel at the Caribe Hilton, San Juan, Puerto Rico. This apprenticeship continued to the Four Seasons Hotel in Washington, D.C. and further to the Outer Banks of North Carolina. After a year spent at the Don Cesar Hotel in St. Petersburg, Florida, my wife Laura and I moved west to Boulder, Co.
Born to a Tunisian Father and American mother, I have developed a global approach to food, employing the philosophy of “quality ingredients simply elevated”. My belief that all cultures, and therefore cuisines, merit respect has led me to explore many different culinary paths. This perspective allows me a diverse and creative approach.
