Many years experience in a wide range of cuisines. Energetic, adaptable willing to make changes and remain flexible.
I am a 37 year old chef who began working in restaurants at the age of 13. Beginning in a French Bistro named Bistro Laurent. Working my way up through several types of food over the years including fine dining, Italian, Spanish, French, Indian, contemporary dining etc. I had my first sous chef position in Marin Co. At Boca Steakhouse shortly thereafter working as a Head Chef at Belcampo Meat Co.

I still love to cook at home from scratch and always read a good book or enjoy time with friends for a good concert. Also sometimes a night out to eat

I learned to cook from a French chef name Laurent Gaugien at Bistro Laurent in Paso Robles, CA.
A cooking secret...
Cleanliness, organization, and attention to all my ingredients the quality of what I am using. Fresh is great but sometimes a sauce needs San Marzano.
