since I was 12 years old, I’ve been working in a French kitchens 12 to 18 years old and French kitchens in Miami by the time I was 18 I was already a sous chef. I was working at the Mayfair House, Hotel five star five diamond it was incredible. I went to the Navy at 18 but I didn’t cook. I was Corpman. out of the Navy after four years act of duty and I went straight to culinary school and culinary school was a breeze. I was top of the class and because I’ve already worked five years in French French restaurants with the 3 chefs they took me to each restaurant with them and it was amazing. I was very lucky I went to school in the morning then work.
