History

Pablo Gimenez Melo has cooked throughout Latin America for over 20 years, but his love for wine and organically grown produce drew him to Northern California. Pablo was born in Santa Fe, Argentina riding horses and playing in fruit trees on his family's farm, where his sensual palate was informed by fresh flavors and aromas. He learned classic European culinary skills from his French grandmother Julia, while his father taught him the Argentine Asado grilling tradition of the Río de la Plata. Vacations spent at family friends’ vineyards in Mendoza and Salta further educated Pablo’s palate in international wines. Pablo's deep connection to the natural world informs his flavor infusions that transform the California dining experience.

The first invitation-only dinner parties began in Buenos Aires in 2006, and expanded to Bogota bringing together art, music, wine and food. In 2016, Pablo's ‘secret’ dinner events grew to include San Francisco, partnering with other chefs and sommeliers, with locations announced weekly online. His Dinner Parties and Dinner at Home, bring a professional restaurant experience to a more intimate setting.

Wow! Every single thing about this experience was 10/10! Juan and Ricardo were so friendly and professional from the moment they arrived. We were able to completely relax while they prepared our meal without needing a thing from us. Every dish was exceptional and they were extremely thoughtful about food allergies, too. The level of service was what you’d expect in a 5 star restaurant and they took the extra care to keep our glasses full with wine we’d brought home from a day in Napa. They left the kitchen immaculately clean and all of us were so happy. We will absolutely do this again!

A big thank you to Pablo for cooking an amazing meal for my son's 18th birthday. The food was fantastic. Everyone had a great time. Can't wait to eat Pablo's cooking again.

Pablo and his son were a fantastic team! They prepared an incredible dinner at our Airbnb, complete with menus and table service. We weren’t sure what supplies our Airbnb would have, but Pablo just brought everything and rolled with it. The best part was that everything was cleaned up by the time Pablo left, so there was nothing left for us to do except enjoy our evening. 10/10, would highly recommend!!

What a pleasure having Chef Pablo cook for us! It was so nice to be able to enjoy a fabulous meal and really relax - something that couldn’t have happened for us at a restaurant given we have a toddler who likes to run around during dinner ha. The presentation was beautiful, food was great, and we were all able to kick back and enjoy each others company as a result.

Jp and father Pablo provided an exquisite experience. They set the table with menu and accommodated celiac and vegetarian guests! The whole meal was fabulous (grilled Argentinian steaks ! And halibut!) from the app, salads, entrees and deserts.They left the kitchen cleaner than they found it. We had an incredibly relaxing dining experience. Bravo!

BOOK CHEF PABLO AND JUAN PAOLO! This father-son duo blew us away with this in-home private chef experience. - The service: they arrived promptly (even to our admittedly tough-to-navigate, back-roads Airbnb); they were incredibly personable and attentive; they didn't let us worry about a thing (from setting the table to refilling our water/wine to serving each course) - The menu was amazing - a phenomenal range of flavors and fresh ingredients. We requested they leave the chimchurri for us and we used it for days after, couldn't let a drop go to waste! We have empandas, salad, steak, creamed spinach, fig and apricot with sorbet for dessert...just an amazing meal and incredible blend of flavors. - Prep and clean-up: They came fully prepared and made do with our pretty tiny Airbnb kitchen. They served us promptly (though not rushed) and left the kitchen even cleaner than they found it. True professionals through and through. - Expertise: We also enjoyed hearing about both father and son's background, and will be sure we follow them for future needs too. Chef Pablo brings years of expertise and his son, Chef JP/Juan Paulo is evidently following his footsteps. We'll be looking for opportunities to work with both again in the future.
