Chef Juan’s unique blend of Latino style and flavors derive from childhood memories
Juan’s experience comes from working with some of the best chefs in Denver. While attending school he held the title of Sous Chef at Panzano an Italian restaurant with a history of developing great chefs. Wiggins took interest in 19-year- old cook Juan and gave him the first real opportunity to cook and lead a kitchen. Gaining knowledge of his life long favorite cuisine, Juan left Panzano’s Italian kitchen for something more modern, more Asian, Mediterranean and American flavors. Coronado lands at the epicenter of what now is Tag Restaurant Group to work next to his mentor, chef Troy Guard. In the years Juan worked at Tag they were named one of the Top 25 Restaurants in Denver. Juan collaborated in the opening and running of several Tag restaurants from the exclusive steakhouse Guard & Grace to Sugar Mill to the occasional event at Tag. Chef Juan Coronado was the opening Executive Chef of Los Chingones, Tag’s modern Mexican restaurant, for almost 4 years, where he delivered inventive creations and organized the opening of their second and third location. Now Chef Juan has partnered with Sam Galeotos with the goal of developing a restaurant in Cheyenne Wyoming, to push the boundaries of service and food, and to bring the town a place to socialize and become a foodie.
