Chef Jose Castillo Forbes

My name is Jose Castillo Forbes, also known as Chef Don Jose. I was born in the Dominican Republic, but I am also a belonger here in the beautiful TCI. Cooking has been my passion all my life and I have explored and learned a great deal about culinary excellence within my 20+ years of experience.

From 1993, I started work in a Caribbean restaurant specializing in seafood until 1995. In the same year I moved to the TCI to start work as a line cook at Beaches resort making breakfast, lunch, and dinner until 1998. Then I moved to Parrot Cay to expand my expertise in seafood, fresh pasta, vegan, kosher, vegetarian, French, Italian, and Asian cuisine until 2000. In 2000 I traveled to London to work at an Italian restaurant, but returned to my home in the TCI two years later. I continued my work at various resorts here on the island including the luxurious Beaches, Seven Stars, and as a private Villa chef for the Beach Enclave. In my many years in this business, I have had the pleasure and honor to work for Three Michelin Star winning chefs, Daniel Morgan, Stefano Cavallini and Chef Sergio, amongst having the opportunity to privately cook for many of the celebrities that have come to stay at Parrot Cay.

It is now time for me to bring all of my expertise to your home as I start my next adventure as a Private Villa Chef here in this beautiful island of Turks and Caicos.
