Chef Jeffrey Schlissel is a culinary innovator with 30+ years of experience, known for fusion cuisine, sustainability, and a unique cookbook.

Chef Jeffrey Schlissel, known to many as Cheffrey and famously dubbed the Kingpin of the Bacon Cartel, has embarked on a new culinary journey as an author. His latest cookbook is a groundbreaking work, focusing on his personal struggle with food addiction. This raw and unfiltered account combines his own family recipes with innovative versions of the dishes he's renowned for, all transformed into whole food recipes with better ingredients.

With over 30 years in the culinary field, the Kingpin’s career began humbly with his mother and evolved into a lifelong passion. His expertise spans a wide range of cuisines, but he particularly delights in crafting dishes with a Pan Asian Floribbean flair, which he affectionately calls Floribbeanasian. He prioritizes locally sourced and sustainable ingredients, and his recent explorations in modern cuisine include creating a unique vegan bone marrow that’s been met with rave reviews.

Growing up in South Florida enriched his palate with Latin flavors, blending bold, fiery tastes with refreshing tropical notes for a Zen-like dining experience. His extensive restaurant experience includes corporate and independent venues, hotels, and country clubs. Notably, he has been a national presenter at the National Convention of the American Culinary Federation for six years and has worked closely with local farmers to enhance the quality of their products while reducing environmental impact. His commitment to minimizing food waste has become second nature, as effortless as cracking an egg.

The Kingpin’s philosophy on smoking food reflects his deep connection to traditional cooking methods: “For me, smoking our food is the most primal way of cooking! It brings us around the fire to talk, to tell stories, and reconnect with the way things used to be. It is the ultimate challenge to find that sweet spot in the smoker and get the final product to be as close to perfect as possible!”

Chef Schlissel’s accolades include serving as the President of the Palm Beach Chefs Association for two terms (2018-2022), winning Best Asian Fusion Restaurant in 2012 by Boca magazine, being named Cutting Edge Chef of 2016 by the National Convention of the ACF, Chef of the Year for the Palm Beach Chefs Association in 2017, and Voted Best Plant-Based BBQ Restaurant – Southeast 2022. He was also honored with the Presidential Gold Medallion in 2022 from the American Culinary Federation.

Chef Jeffrey Schlissel is the President of the Palm Beach Chefs Association, winner of the best Asian Fusion Restaurant in 2012 by Boca magazine, Cutting Edge Chef of 2016 by the National Convention of the ACF, 2017 Chef of the Year for the Palm Beach Chefs Association. He is now delighting guests with his unique creations as Head Chef / Partner at Locale Gastropub & Test Kitchen
