My cuisine philosophy is fresh, seasonal & simple ... that is the approach that I take whether it be writing a banquet menu or coming up with an a la minute dish for a guest. Simple fresh food done correctly is what any cuisine is built off. You can't do anything but make excellent fresh ingredients better just by following simple techniques and a little creativity.
