I am a Professional chef with over 15 years and counting of consistent experience. Originally from the Southwest Louisiana, along the gulf coast of Mexico. The Acadiana region to be exact where I’ve learned cooking traditions, using indigenous herbs and spices, that are native to the cuisine of Louisiana. Outdoor cooking, smoking of meats, seafood, slow braising fresh meat. Stuffing and frying all on open fires. Which today we call Cajun creole cuisine . Living off the land will always be dear to my heart. I travel the world always learning and using my culinary education with what I was raised on as well as and taught in school. Allowing guest and clients to enjoy amazing flavorful creations. I am very well entangled in the industry as I have a life long passion for cooking.
