A true Aussie with a cool, laid-back style and salt-air tousled hair, Chef Craig hails from a small town outside of Perth called Geraldton. As a teenager dreaming to be a professional surfer, he stumbled on a restaurant job which allowed him to surf during the day and work at night. The job out of necessity to support his surfing lifestyle turned into a career and a life-long love and passion for cooking. When he realized he had a tremendous talent and the drive to become a chef, he traded in his surfboard for four-years of schooling and apprenticeships around Australia. He then moved to Europe to further train with such luminaries as Troisgros, Lucas Carlton and Guy Savoy. Stateside, he rose through the ranks quickly and lead some of Manhattan’s most prestigious kitchens such as Picholine and Le Cirque before landing in LA to further his creative journey as a chef most recently at The Strandhouse in Manhattan Beach. His accolades include 2 Michelin Stars while at Picholine and Starchef’s National Rising Star in 2007.
