I am a professional Chef with 25 years of experience in the culinary landscape. I have worked everywhere from taco stands to award winning fine dining restaurants. I love bright fresh flavors, and ingredients crafted with care and sustainability. I have a degree in Sustainable Food Systems and come from a family of farmers. I love to incorporate local vegetables, meats, cheeses and foraged items into meals. I really believe the best quality ingredients you can find might come from your neighbors. My passion in food is learning new techniques and traditions and how to incorporate them into my own culinary style.

I have always believed the kitchen should be a safe space for everyone. I believe in creating a judgment free zone for everyone, so that we can all enjoy uplifting experiences equally.

I love showing people new techniques and talking with anyone who loves food. Patient and positive I have made a career out of teaching inexperienced staff, and individuals to learn, gain confidence, find their voice and thrive.

I have the ability to do private dinners at your residence at offsite locations or at my small Burlington Vermont Restaurant where I can host up to 25 people.

Chef Charles was amazing and top-notch! I booked him for a 25th Anniversary dinner for two friends and they could not say enough about him and the delicious meal he prepared for them. He was so easy to work with and crafted the perfect menu based on individual preferences. He was extremely responsive and met every request that I had for this special dinner. The presentation of the food was beautiful and "one of the best meals" my friends ever had! He definitely went above and beyond to make this a truly special evening for them. I would highly recommend Chef Charles and he is definitely a 10/10!!
