Chef Carolina Santos-Neves

Carolina Santos-Neves is a celebrated chef and culinary director with over 12 years in various creative leadership roles. I am currently overseeing culinary operations at Comodo, now housed in New York’s Freehand Hotel, after originally launching the Latin-inspired concept in SoHo over ten years ago. Previously I led the culinary team at American Bar, from pre-opening to its position as one of New York’s most successful new restaurants with over $10 million in annual revenue.

Based on the success of American Bar, I was part of the team that spearheaded the launch of Saint Theo’s, a modern Italian concept that became a critical darling and a destination dining experience.

I was part of the opening culinary team at Colonia Verde, which has been a neighborhood favorite in Brooklyn since it launched in 2014.

I've had guest appearances on the Today Show where I've shared a few of my creations with a national television audience.

Through my consulting platform, Call Me Caro, I've regularly collaborated with brands and hospitality companies around the world for pop-ups in addition to providing menu and culinary consulting.

I started my food career as an editor at Epicurious. I received my formal training at The Natural Gourmet Institute and informal training learning from my mother and with friends in kitchens across Europe and South America.
