I have 15 years of experience in a variety of different cuisines and styles. I’ve worked in locations that have done high volume and fast pace, to exclusive 10-12 course tasting menus. Every position from line cook up to Executive Chef. I absolutely love cooking Asian, specifically Japanese Izakaya. But my Sicilian heritage keeps pasta close to my heart. From James Beard experiences to celebrity chefs, I have been all over the board. I prefer to source from small, local farmers and purveyors whenever possible. Taking the time to craft each and every aspect of a recipe I can from scratch.
