Midway through my career I found myself working as a private chef for some big record labels and regularly cooking and doing parties for music industry celebrities like Mick Jagger and his family, Adele, Kate Moss, Mark Ronson, Tom Jones, Neil Young, Radiohead, Rod Stewart, Arctic Monkeys, Paul McCartney. The Foo Fighters. The Artist Damien Hirst. Plus tons more you may or may not know.

This period was really exciting as there were so many cool parties and I met some of my musical heroes. Highlights were, playing drums on stage with the Kaiser Chiefs at Webley Arena! And clumsily dancing with Jerry Hall at her daughter Lizzy’s 21st party at which I was doing a mad hatters tea party.

In Thailand:

Rockpool at Karma Resort in Koh Samui

Rock Salt and Sea Salt restaurants, where I was Chef Patron in Koh Samui. A gastronomic restaurant and live jazz bar.

Samujana Luxury Villas

Toast – My own catering company doing villa events, video shoots, TV shows, Weddings and parties

Sala Samui Resort in Choengmon in Koh Samui.

Sala Boutiques

The White Rabbit Club – My Secret supper club which involved the guests being profiled and interviewed prior to the event then blindfolded and driven to a mystery location in the jungle where they were ziplined in to a tree house canopy dining room 80 feet off the jungle floor where the guests were fed my carefully researched 12-course tasting menu, to the backdrop of tribal tree-nymphs, fire jugglers, war- painted drummers. From my tree kitchen I carefully crafted courses of jungle food, to be paired with culinary theatre, wine and cocktails, it was either marched across the Indiana Jones style rope bridge or lowered from the trees by acrobatic waitresses.

Personal Info:

I was born in London and my family moved to Liverpool, Yorkshire, Leeds and finally the Cotswolds near Cirencester. I studied in London for 3 years and stayed working and then travelling as much as I could. London was home for a long time. But Thailand was always my second home.

I came to Thailand when I was just 18 years old, and spent time going back and forth between working and studying and ended up spending 15 years here of the last 25 years.
