Two decades deep in the culinary world, I've traversed kitchens from Dublin to Dubai. Had the privilege of learning from the esteemed Michelin-starred Chef Dylan McGrath back in Ireland – a true master of the craft.

My focus lies in elevating comfort food. Think fresh, seasonal ingredients treated with modern techniques, resulting in dishes that are satisfying yet innovative. Perhaps it's a holdover from my Polish upbringing, where weekends were spent assisting my mother at her vegetable market, that I have such a deep respect for quality produce.

Throughout my career, I've held esteemed positions – Sous Chef, Head Chef, and most recently, Executive Chef for a prominent hospitality group in Dubai, responsible for some of the city's most beloved dishes. Sustainability is a core principle in my kitchen, and I champion the use of local ingredients whenever possible. I define my culinary style as "Nomadic" - a focus on fresh flavors, adapting to seasonal offerings, and drawing inspiration from the rich tapestry of global cuisine.
