Chef Nicola Inquieto

Born and raised in the Napoli region, I grew up eating real slow food. Family food. The smell of food was always around me, because someone was always cooking. Eating together was the glue that brought families and community together. Everything was made by hand, too. Buying pre-made food was unthinkable. All the food I ate was instilled with love and attention.

After moving to Amsterdam, I was a chef in several restaurants. During this time, I learned a lot about technique, efficiency, and other cuisines, but there wasn’t a lot of space for creativity and experimenting. I broke out of the stressful hustle-and-bustle restaurant culture and started tuning into what I wanted to bring into the world.

With Nico’s Trattoria, I’m bridging the gap between experience in the fast-paced restaurant world, and soulful, slow, Italian family food. I stay true to the classics, but I also like to experiment (beetroot gnocchi, anyone?). I make all of my food from scratch, mindfully and lovingly. I love to share my passion for good food, and I do this by bringing my cultural and culinary heritage into your homes, bellies and hearts. Ready for a taste?
