I am a chef passionate about Mexican cuisine, rescuer of my culture and tradition using avant-garde techniques,

I am fortunate to have done an internship at the Rodrigo de la Calle restaurant in Aranjuez, Spain, under the command of Chef Julio Velandrino, as well as learning from Juana Amaya, a traditional cook of Oaxacan Mexican cuisine.

I am passionate about my profession, which makes me punctual, with initiative, responsible, orderly, and self-motivated.

It’s was a lovely experience and very friendly

Absolutely outstanding and one of the best meals we had while we were in Mexico, and we tried several places!
