Im originally from San quintin Baja California the land of oysters, good livestock and vegetable cultivation,
I always grew up with the idea of cooking is about farm to table . always using smoke as an ingredient.
My cooking experience is about sistaintable menus , and good ingredients . My idea of experience in culinary school has been life, working throughout Latin America, from Peru, Argentina, Ensenada the wine country in restaurants renowned for their technique and use of sustainability.
Other sides of my work , im a consulting restaurants chef , i use to have “Casa Frida “at valle de Guadalupe , “As de guía “ in Ensenada / San Miguel de Allende / oaxaca . And afther that a oyster bar in ensenada .
