I worked this year with an international hotel "Le Méridien Makkah", Mecca, Saudi Arabia, as EXE SOUS CHEF and fully in charge of kitchen operations. Supervising both the administration and operational aspects of all F&B outlets, Indentation, Menu Planning, Staffing, Costing, Standardization of Menus, Staff Training and New Menu Experimentation, Preparation of Cost-Benefit Analysis Report, Handling Out Cateringporte, Mega Banquet up to Two thousand people per day per meal and maintenance overall health and safety in the workplace. Before that, I had joined as Deputy Manager handling and successfully establishing the entire banquet operation as the market leader in the city with standards. Establish, enforce and monitor the performance of the Stewarding operation in food production and service to achieve the highest hygiene standards possible, minimizing equipment breakdown operating and streamlining efficient resources and equipment flows
