Chef Massimo Mancarella

Born and raised in Brindisi, Puglia - Massimo discovers his passion for food while watching his grandmother prepare the classic Sunday family lunch.

This curiosity drives him to enroll in the hospitality school in his city and to obtain a diploma in cooking.

After learning the basics of iconic Italian cuisine, Massimo decides to broaden his professional experience first in his region and a few years later, in Rotterdam, Netherlands, where, for the first time, he has the opportunity to work as a kitchen chef and unleash his creativity in creating dishes for a well-known restaurant in the city.

After 5 years, he decides to return to Italy to further expand his knowledge, enrolling at ALMA academy, the most prestigious Italian cooking school internationally.

This training path will give him the opportunity to learn from the best Michelin-starred chefs in Italy and beyond, and to increase his technical, historical, and cultural knowledge of Italian cuisine.

Having obtained the Chef diploma from the academy, the curiosity to explore new cultures and cuisines leads him to move to Spain, to Madrid, where he will lead two restaurants in the capital, absorbing some Spanish influences that can still be found in his dishes today.

Since 2023, Massimo returns to Puglia and decides to step out of restaurant kitchens to dedicate himself to the profession of a private chef throughout the Puglia region, putting into practice his knowledge and applying it to the enormous variety of products that the region can offer.

His cuisine is direct, recognizable, and without frills. The typical flavors of Italian cuisine blend with a constant interplay of pairings and contrasts, offering a truly unique culinary experience.
