On a budget of little and less, I backpacked 13-countries in an epicurean tour de force of the Old World. To do so, I sacrificed the comfort of a job I loved and racked up debt. But in return, my life and career was forever changed for the better. I have worked at various restaurants and learned multiple cuisines
