“Sua Basque Fusion” is a multi-awarded dream that came true.

It was born as a concept about sharing food with family and friends since this has been a tradition since the dawn of time. Put simply, food culture is going nowhere. a meal demands attention and—when done right—can be an experience. Ultimately, a good meal can be a pleasurable, rewarding sensation: for the diner, and for the chef. Cooking means to me more than a job. Passion and recklessness. —it is an extension of my life. I am dedicated, devoted and driven by food. Digging into the relationship between food and humanity; honouring the deep history of culinary tradition; and knowing that preparing good food is more than copying a recipe.

Aside from serving as sustenance. Sua Basque Fusion is to me the creation of identity. Irish food with a Basque twist. As the quote above indicates, food is a representation of national uniqueness. Consider some of the world’s notorious food cultures: Spain, France, Japan, and Vietnam. Now think about how disparate and distinct these nation’s food traditions are. It’s no surprise that the world’s oldest nations have the best recipes. That’s the power of history.

Sua is creativity. Is an experience that separates a culinary experience from nourishment. Leaving dinners speechless. That is Sua about.
