Chef At Home In MonaghanCiao,
My name is Angelo and I am from the province of Naples in the beautiful
south of Italy.
Growing up I was so fortunate, as I lived on a farm and my parents are
pretty self-sufficient as they grow all their own fruits & vegetables and have
a few pigs, chickens & hens. I always helped my father in the fields,
planting, picking and collecting and we also butchered our own meat. The
butcher would come around and would help us to cut everything into the
various different cuts and to make sausages. We would also make dried
meats which would hang in our cellar - fantastic for antipasti!
Each season we would have an abundance of various fruits & veg, so for
example in summer it is courgettes, aubergines, tomatoes, apricots and
plums. My mother always had the great task of coming up with different
dishes, so this is where my love for food grew!
Self-motivated and energetic chef with over 20 years experience of working in high quality kitchens.
I am comfortable creating my own menus, adapting dishes, stock control and running a kitchen to a budget. I have the necessary skills to manage a kitchen. I have worked for privately owned restaurants and a cookery school in Italy where we sourced all our ingredients locally
