Totally unique, very easy going & wildly passionate about quality and creating elegant dishes.
For me, food is all about creativity, seasonality, and originality. I
want to create dishes that people can connect with—but really exceeds
their expectations.
That starts with using the right ingredients at the right time of year and
pushing flavours in unexpected directions. My style leans toward fine
dining, but I’m also deeply influenced by fermentation, both for the
depth it brings to a dish and its natural connection to nutrition.
Whether it’s pre- or post-surf fuel or a multi-course experience, my
goal is always the same: to create something unique, intentional, and
unforgettable.
