Chef Julio Petrus Julio

Born in West Sumatra in the early 90’s, my life has always bond with our traditional Batak and Minang Cuisine. My mother has been a great inspiration for me through her authentic recipes and cooking techniques which lead me to become a chef.

My career started from the scratch where I took my first steps in the hospitality industry as a stewarding member on the age of 17 during my senior high school days. My chef’s talent been appreciated speedy and I started as a cook helper when I just turned to 18 years old.

2012 to 2016 my journey kept me close to my family on Sumatra island before leaving for Bali to develop myself and career further.

For the next 3 years I moved junior ranks within 2 trendy Kuta restaurants before taking on my first Sous Chef Role within a Boutique Style Hotel to run their Tapas Bar and Lounge. I got a valuable experience by working with Michelin-awarded chef Martin Cercellini Sorensen from NOMA, Denmark – my game changer and super inspirational.

Two years later I joined my first international 5* Hotel, the Hilton Bali Resort, in charge for the Shore and Breeze restaurants (the resort’s beachfront dining venues) before finding my new assignment with The Westin Resort Nusa Dua, Bali under the wings of Chef Matt Mittnacht. Several High profile events such as the G20 and the 2023 Marriott Asia Pacific Conferences for Operations with 1.000 attendees and then the Consumer Conference with 700 attendees been very inspirational and boosting my expertise and management skills.
