I am working over 15 years in fine dining restaurant in France and Hong Kong, passionate to share my knowledge and create unique experience
My name is Loïc CATHERINE, I am from south of France where I start my culinary journey and develop my basic skills about Mediterranean flavour, then I move to Paris for new experience and I have chance to work for Nobu Matsuhisa for over 3 years.
7 years ago I arrived in Hong Kong to get influence about new flavour and new culture.
