James was amazing! Not only was the food very tasty but also how he presented it and worked with the things we had at our rented home. He knew exactly what he was doing and he gave us an incredible experience and really full bellies! I would recommend James to anyone at anytime!

Food is a universal medium that helps us create shared experiences with people, places, and cultures. And Chef James proved to be a masterful wielder of this medium. His professionalism, personability, and acumen in the kitchen stood out as highlights, of course. He prepared a variety of dishes rooted in the regional culture, and his extensive professional experience shone through the preparation of them all. These dishes, in turn, served as the template by which we could more deeply appreciate the regional cuisine. "Not as good as Chef James' version..." was uttered several times throughout the remainder of our trip! More than just the food, though, Chef James created for us a vehicle through which we could participate in his approach to the culinary process. Whether we goaded him into it or not, he was a cheerful and welcome participant in our conversations, and he readily juggled our numerous questions and asides while remaining deftly at work in the kitchen. Not often do you get to experience the product of a craft while having interactive, back-stage access to the crafter. And Chef James' craft is one we will fondly remember. The highlight reel, in short: * timely, prepared and organized, which is an especially tall order in any novel working environment (to our amazement, the kitchen was left cleaner than before he arrived, and he was able to seamlessly navigate around notable shortcomings in his workspace: an under-spec'ed fuse box that wouldn't let the range, oven, and range hood all run simultaneously) * a wide variety of expertly-prepared starters, mains and finishers, tailored to suit every palate * encouragement of as much, or as little, "crowd participation" as you might want

We were staying at a gorgeous villa in Greece for my 30th birthday and we were lucky to have chef James cook us all delicious 3 course Greek inspired dishes! The food was 10/10, started off with a cheese and dips platter & I went with the prawn saganaki as a starter, traditional Greek lamb kleftiko for mains and desserts were deep fried mini donuts, as well a chocolate ice cream cake. SO TASTY! He gave us details about the origins of the dishes which was really interesting, the kitchen was so clean when he left. I will never stop talking about it this meal experience because it was definitely one to remember! Thank you James!

Incredible food, great story telling and beautiful presentation with generous portions He made us at home relaxed and didn't have worry about nothing, anything we asked James he created with love and creativity. Wanted to propose to my fiancée now and he out of his way to create one of the most unforgettable dinners of our life An all around great professional Definitely will book him again and recommend him to our friends
