Having been cooking now for over 25 years, it has become imbedded in me, almost is second nature and nothing makes me more happy then to be sourcing new ingredients and creating new dishes to cook for my clients or give a live demo on stage at a food festival, with so many local producers, farmers and fishing boats we are privileged to be able to experiment with new dishes
