Chef John Penman

I have had the pleasure of working as a chef now for eight years, with the last two years spent working privately. My background is in classic fine dining and modern deli cuisine.

I started my career at the 3AA Rosette fine dining restaurant of Rushton Hall, where I worked over a period of four years learning the fundamentals of modern fine dining. I have since worked at Pickett's deli, a 1 hat North American inspired cafe in Melbourne and in Ms Vy’s market restaurant in Hội An Vietnam.

Since entering the private sector, I have carried out a variety of events across the UK, the French Alps and the Côte d'Azur.

I’m passionate about cooking a range of cuisines including Middle Eastern, Vietnamese and Mexican. However my love lies working with modern European and Mediterranean fine dining.

I particularly enjoy cooking for guests who are celebrating a special occasion or who are on holiday. It brings me great joy to be part of making their experience special and feeling a sense of that inclusion.

As often as possible I try to provide a bespoke menu service working with the best local and seasonal ingredients.
