I take pride in cooking with seasonal and local produce, using it to the best of my abilities to create harmonious flavours and textures in each dish.

I am a passionate, hardworking chef with a breadth of experience working in restaurants and hotels and private properties. I am a strong member of a kitchen team, and pride myself on being able to adapt quickly to different situations and systems. I encourage a team working environment and am confident with taking leadership of a kitchen, supporting and encouraging junior members of the team. I work best under pressure and am extremely motivated to create an environment conducive to producing high quality food at all times. My interests lie in working with seasonal produce, researching and development of great foods from all over the globe, love doing butchery, very much into fermentations, foraging and cured meats and fish
