Since February 10, 2014 Executive Chef, Grand Hôtel de Cabourg *****, Accor group, MGallery By Sofitel, 20 cooks a year, 30 in season and mainly responsible for the gourmet restaurant Le Balbec, the beach restaurant and the dike restaurant, room service, bar catering and seminar meals.
In 2010 to 2013, I worked as the Chef de cuisine in the Park hotel ****, Accor group, MGallery By Sofitel gourmet restaurant le Louis 10 (3 forks in the Michelin guide). Consultant to the Chavant brewery since the opening in May 2012, a red fork obtained in the first year. I also worked as a Chef de Cuisine for private yachts in Monaco.
06/12/10 - 09/15/10 Chef de Cuisine for a French billionaire (one of the top 25 fortunes in France) on his private yacht in Monaco. I also managed to be responsible for 2 restaurants in prestige ships and luxury cruises *The Compagnie des Îles du Ponant
