Chef Herculano Jesus

I’m Herculano Jesus a Executive Chef , coming from the fisherman’s island of Madeira in Portugal .

He grew up in an organic vegetables farm surrounded by the smell of fresh fish and artisanal winemakers, and developed at early age a passion for fresh and learned to develop new flavors.

After his first experiences in Portugal, he then moved to London and Italy, then to Antigua and his love for the Caribbean was truly at first sight!

St Barts, St. Maarten and Anguilla are also amongst his culinary melting pot.

He speak in 3 languages English, Spanish and Portuguese and loves to connect with people, taste new dishes and share his immense creativity and passion with our guests and team members alike.

He poetically describes his vision of the world, like spices wisely used as medicine and flavor in food.
