Growing up, Chef Mark was captivated by the sight of his grandfather cooking holiday meals that brought the family together. This early exposure sparked a passion for food that would shape his future.
It was during his first job as a dishwasher at Jack Rabbit Slims in Coburg that Chef Mark discovered his natural talent for cooking. Moving up the ranks to become a prep cook, he realized that his true calling lay in the culinary arts. Determined to refine his skills, Chef Mark pursued formal education and specialized in Italian and French cuisine, mastering techniques that would later define his fusion style.
