Sunday dinner at my house growing up was a cherished family tradition. Everyone important to me gathered around the table, eagerly anticipating the delicious meal. Looking back, I feel truly blessed when my father showed me his ways in the kitchen. From then on, I was a changed young man; Sundays became synonymous with following my dad's lead and perfecting my favourite dish, curry chicken.

And that’s where it all began. My passion for food has developed into what is now G&B Hospitality. But it wasn’t always just me, I’m the B in G&B. After training under numerous chefs and exploring the industry, I crossed paths with Chef Gavin Vasquez, and we became not only business partners but brothers. His inspiration led us to establish G&B, a hospitality staffing agency. Then, the unexpected happened with Gavin’s untimely passing. Although it was a turbulent time, his memory fueled my determination to keep this dream alive.

That’s when G&B pivoted its focus, expanding the brand throughout the pandemic, during the most challenging time for the hospitality industry. Now, I’m honoured to introduce to you the Chef Billy brand. We specialize in BBQ, intimate weddings, pop-ups, and private events, offering signature food products like our dry rubs and marinades, sausages, pierogis, and cured meats, all under the G&B Hospitality umbrella.

We’ve grown, and we’re growing. It would be my privilege to have you and your loved ones come along on this food journey as we continue to celebrate and elevate the Jamaican, Grenadian, and Trinidadian influences in our dishes, bringing families and friends around the table once more.
