This is where I develop and showcase the harmony of food and community! I started Ginkgo Fine Dining in 2021 after leaving the restaurant industry, and now I travel across Canada, the USA, Mexico, Japan and Europe to share my love of food. Some notable titles and spaces I’ve held over the past 9 years cooking include Brewer’s Table MN and Spoon & Stable in MN, Sous Chef at Wildair NYC and Chef de Cuisine at Emilia in Mexico City.
I curate intimate culinary experiences: multi-course tasting menus + beverage tasting, micro-weddings and farm-to-table events, as well as food styling and photos for commercial ventures. My primary focus in 2024 will be the offering of Wilderness Cooking Classes, as well as full service nourishment for yoga and ski retreats. As a native of Minnesota, I was fortunate to grow up surrounded by the captivating beauty of it’s diverse ecosystems, from dense Maple and coniferous forests I ran free in, to the wild shores of Lake Superior. These natural surroundings have instilled in me an unwavering appreciation for nature and a profound desire to understand the direct source of the ingredients we use to nourish ourselves. All of this drives the desire for beautiful artistry and creative presentation. Foraging and farm-fresh ingredients are a constant inspiration for my menu development and curriculum. Working with fire, fish and seafood, pasta, and different methods of preservation are some of my specialties, but I love to learn and create dishes from all over the globe. I am always in search of other people who appreciate the full journey of a meal!
I believe that by fostering this reverence for nature and embracing a conscious approach to food, we can create a harmonious relationship between our culinary curiosities and the environment that nurtures them.
