I'm a self-taught chef that never went to culinary school, learned the hard way. I kind of just throw it of the box a little bite more. I was born in Morocco, a country where traditions and family are cherished. Food is an important part of Moroccan identity. My favourite memory as a child was the constant smell of the delicious food that my mom was cooking. I would pretend to cook with my mom and she would let me play at cooking with her. At that time boys / males were not trained for those sort of concepts and usually they never got involved in the kitchen, but I consider myself as a rebel and I really want to learn cooking
I bring a great respect of classic technics. It is much harder to find the old traditional food because people don't want to put time and effort in making it. Moroccan food is labour intensive but the rewards of patience is priceless.
