Coming from the island of Jersey where seafood is reputed to be amongst the best in the world, I have honed my personal style of seafood preparation over the last 30 years. Born and raised in France, I love cooking and preparing seafood dishes with a variety of wines, butter and fresh herbs.
Living on an oyster farm in Jersey gave me the opportunity to deepen my knowledge of oysters and get creative with recipes and flavours from all around the world. My guests love the culinary experience I create that invokes curiosity and touches the soul.
