La cocina despierta en mi emociones y vibraciones que quiero transmitir a mis comensales a través de mis platos, cocinados con pasión y mucho cariño.
Mi proyecto de cocinero en Lanzarote se llama el Burgao Experience (siendo el Burgao un Bigaro) pues representa como un chef puede llevar su casa a cuestas para poder llevar su cocina a cualquier cocina y comensal.
Mi aventura de chef comienza con mi formación en el Institut Paul Bocuse en Lyon donde me formé como cocinero. Me dediqué a viajar por el mundo, llevando mi cocina franco-española a paises como Tailandia, India, Marruecos o Brasil, paises en los que cociné y aprendí las cocinas autóctonas con chefs locales, ampliando así mis conocimientos culinarios.
La vida me llevo a asentarme en Lanzarote, y creé una escuela de cocina llamada Cook in Lanzarote para enseñar todas las cocinas que habia aprendido. Debido al covid tuve que cerrar la escuela y trabajé en un restaurante peruano (Kenewa) y otro de fusión asiatica (Nakai).
Para Burgao Experience, he creado una amplia variedad de platos, fruto de toda esta experiencia culinaria, ya fuesen recuerdos de la cocina de mi familia andaluza, de la cocina en una reserva de elefantes en Kerala (India), de la del grandísimo Paul Bocuse en Lyon (Francia), de la de Nakai (Lanzarote) o de cualquiera de las cocinas dónde me diverti cocinando por el mundo.

En en Instituto Paul Bocuse aprendí mis bases de técnicas de cocina, con los viajes aprendí a crear platos nuevos y en restaurantes a aplicarlos.
